INGREDIENTS
  • 4 lbs American rice
  • 1 frying chicken, cut into 8 pieces
  • 1 cup corn oil
  • 2 medium onions, sliced
  • 5 garlic cloves
  • Pounded to a pulp 1 can tomato puree (2 ½ oz)
  • 2 medium tomatoes chopped
  • 2 medium carrot, grated
  • 1 orange, grated rind
  • 3 tbsp oil
  • 6 cloves
  • 6 cardamom pods
  • 4 sticks cinnamon
  • 4 tbs raisins
  • 4 tbs almonds. Soaked and split.

Kabsa Rice



Preparation
  • Wash rice and soak in water for at least 15 minutes before cooking.
  • Sauté onion in oil until it begins to brown.
  • Add chicken pieces, tomato, puree, chopped tomatoes and garlic. stir for approximately 5 minute over low heat.
  • Add 3 cups hot water, spices, salt and pepper (to taste), grated carrot and orange rind. Cook for approximately 20-25 minutes, until chicken is done.
  • Remove chicken and keep warm.
  • Add sliced pistachios, almond and cardamoms. Leave aside.
  • Add rice to the sauce and cook slowly over low heat for about 15 minutes.
  • Arrange chicken on top of rice on a platter and decorate with raisins and almond.
  • Serve hot.
