INGREDIENTS
  • 5 cups rice
  • Onions
  • 3lbs (1.35kg) meat
  • 1 piece chicken
  • 3 tins tomato paste
  • 1 1goundnut oil
  • Seasoning (variety) vegetables (cabbage, carrot, peas)
  • 6 maggi cubes
  • Salt and pepper (to taste)
  • Seed tomatoes
  • Bay leafs

Jollof rice



Preparation
  • Wash rice, season
  • Season chicken and meat
  • Grind pepper, onions and seed tomatoes. Boil vegetables separately
  • Pour oil into empty pot and heat for 15 minutes.
  • Deep fry chicken, meat, and then set aaside
  • Fry ground pepper, onion, seeded tomatoes, tomato paste and maggi cubes
  • Mix together fried chicken, meat, and other ingredients
  • Add a small amount of water with small quantity of stew
  • Pour in rice, tomato, paste, bay leaves and salt. Cook until all water is absorbed.
  • Serve rice and stew separately. Add vegetables.
